Roast beef tenderloin wrapped in bacon

Serves: 8 (scaled from 8)


1 lb bacon
1 tsp pepper
4 cloves garlic
3 lb beef tenderloin
3 8 to 9 branches rosemary


Preheat oven to 230 C. Cut 12 1 inch deep slits all over the beef, insert quarter inch thick garlic slices. Rub with pepper. Wrap with bacon, enclosing rosemary branches. Roast about 1 hour until meat thermometer reads 52 C for rare. Rest 10 mins, slice 1/2 inch thick to serve.
