Pine nut cous cous

Serves: 4 (scaled from 4)

Ingredients:

4 spring onions
4 tbsp parsley
280 g couscous
110 g raisins
2 lemons
60 g pine nuts

Method

toast pine nuts. Combine all ingredients except couscous (zest and juice lemons). Cook the couscous and combine, leaving to infuse a few minutes.
