Cashew Chicken

Serves: 5 (scaled from 5)


1 tbsp soy sauce
1 bunch spring onions
1 red peppers
4 dried red chilli
2 cloves garlic
450 g chicken breasts
2 tbsp oyster sauce
175 g cashew nuts


Chop chillis, peppers. Cut spring onions to 5cm length. Fry garlic and chilis to golden. Brown chicken and add red pepper. Add oyster sauce, soy sauce, spring onions and cashews, stir fry 1 to 2 mins more.
