Chicken chow mein

Serves: 4 (scaled from 4)


3 tbsp soy sauce
4 spring onions
350 g noodles
2 cloves garlic
225 g chicken breasts
1 tbsp rice wine
1 tbsp sesame oil
50 g mangetout
115 g beansprouts
50 g ham


Marinade chicken in 2 tsp soy sauce, rice wine and sesame oil. Stir fry 2 mins and transfer to a plate to keep hot. Wipe wok. Stir fry garlic, mangetout, beansprouts, ham 2 to 3 mins. Add noodles, soy sauce, seasoning, chicken and juices, spring onions (finely chopped). Heat through and serve.


May substitute sherry for rice wine
