Spanish chicken casserole

Serves: 4 (scaled from 4)


0 chicken stock
2 orange
2 onions
1 tbsp plain flour
1 tbsp worcester sauce
300 g mushrooms
8 chicken thighs
0.3 pint sherry
0 rice


Chop onions. Toss chicken in flour, salt, pepper. Prepare chicken stock Grate and zest oranges Fry onions for 10 mins. Transfer to a plate. Fry chicken until evenly brown. Add all ingredients except mushrooms and rice. Simmer 25 mins Stir in mushrooms, cook for 5 mins more Serve with boiled rice
