Japanese Rolled Pork

Serves: 4 (scaled from 4)


0 soy sauce
2 thumb size lumps ginger
0 spring onions
10 plums
2 star anise
2 cloves
2 tbsp brown sugar
600 g pork loin
1 handfull coriander


Dice plums to 1 cm cubes. Fry star anise, ginger, cloves 1 min. Add plums and sugar, simmer 20 mins until chunky and pulpy. Cool in fridge. Trim fat from pork and cut into 0.5cm slices. Bash between clingfilm to thickness of 2 beer mats. Season plum sauce, add 1/2 handfull coriander, smear onto pork slices and roll. Steam 10-15 mins. Serve on finely sliced spring onions + coriander + lots of soy sauce.
