Funky pine nut couscous

Serves: 1 (scaled from 1)


2 dessert sppons olive oil
0.5 small bunch parsley
0.3 bunch mint
60 g couscous
1.5 handful raisins
1 lemons
50 g pine nuts
1 pinch cumin


toast pine nuts 15 mins at 220 C with olive oil. Juice lemon, chop parsley and mint. Add all ingredients to the cooked couscous.
