Grand Marnier sauce

170 g butter
2 tbsp sugar
240 ml orange juice
1 tsp orange zest
60 ml grand marnier


Slice butter to quarter inch slices. Heat juice, sugar, rind at low temperature, stirring for 5 mins. Increase heat and boil, thickening to a syrup. Whisk in butter piece by piece. Remove from heat, stir in Grand Marnier.


Makes 300 ml. 240ml is juice of 2 oranges.
