Banana rum and raisin flambe

Serves: 4 (scaled from 4)


4 tbsp brown sugar
50 g butter
40 g raisins
0.3 tsp nutmeg
75 ml rum
4 ripe bananas
0.3 tsp cinnamon


Soak raisins in rum with spice Melt butter, add sugar, stir to dissolve Fry sliced bananas (convex side first) Pour over rum mix and set alight


Serve with sliced almonds, toasted chilled cream, vanilla ice cream
