Beef Carpaccio

Serves: 4 (scaled from 4)

Ingredients:

125 ml olive oil
1 small onions
2 lemons
125 g parmesan
500 g beef fillet
125 g rocket
45 g capers

Method

If being seared:Place beef in freezer 30mins . Sear quickly, then return to freezer

Freeze for about 40mins (suggest much longer - up to 2.5-3 hours wrapped in foil).

Slice thinly, then hammer between clingfilm sheets. Use clingfilm to transfer and press onto serving plates.

Place rocket in centre of plate. Shave parmesan with a veg peeler.

Slice capers if large, finely slice onion, use as garnishes.

Dress with mix of olive oil and lemon juice - should be 90 ml. Season with pepper.
