Vanilla-lime mashed potato

Serves: 6 (scaled from 6)


1.5 lime
0.5 tbsp butter
300 g potatoes
125 ml double cream
1.5 pods vanilla


Cut vanilla beans lengthways, scrape out seeds.

Peel potatoes, cover with cold salted water, bring to a simmer. Cook 20-25 mins.
Meanwhile, simmer cream , reducing in volume by two thirds. Add butter and whisk to an emulsion.

Drain potatoes and dry out in pan. Mash, season, fold in cream and vanilla.

Add lime segments when heated to finish meal.


Use Maris Piper, or other floury potatoes.

If desired, cut vanilla in half again and leave to dry, use as garnish for piped mounds of potato.
