Smashed rosemary potatoes

Serves: 4 (scaled from 4)

Ingredients:

2 tbsp olive oil
1 kg small potatoes
2 cloves garlic
2 large sprigs rosemary

Method

Boil potatoes until almost cooked through - 15-20 mins? Drain and mix with rosemary, oil, garlic, seasoning in a roasting tray.

Whilst mixing, crush slightly. Roast 35 mins at around 200 C

Notes

Seems to benefit from vast quantities of rosemary and garlic.
