Maple cured pork

Serves: 4 (scaled from 4)

Ingredients:

1 small shallot
2 tsp mustard
55 g capers
2 tbsp smoked paprika
4 tbsp maple syrup
2 tbsp groundnut oil
4 large loin chops
225 g greens
3 tbsp mayonnaise
55 g chives

Method

Sauce
Mix mayonnaise, shallot (diced), chives (finely chopped), capers, mustard

Marinade
Mix smoked paprika, maple syrup, oil, rub into chops, marinade at least 3hrs

Cook and serve
Sear chops until black bits form, bake at 140C, 25 mins. Meanwhile steam greens 4 mins, dress with lemon juice, butter and pepper. Serve with sauce.
