Bitter chocolate tart

Serves: 12 (scaled from 12)


255 g butter
360 ml double cream
4 medium egg
140 ml milk
500 g flour
400 g chocolate
40 g icing sugar


Cream butter and sugar in a mixer. Add an egg. Add flour slowly. Mix until pastry comes together. Chill in clingfilm at least 30 mins.

Butter a 20cm tart tin and line with pastry. Prick with fork and blind bake at 180C, 20 min.

Turn oven to 130C. Heat cream and milk, add chocolate to blend. Then add remaining eggs. Pour into tart, bake 1hr. Set 45 min.


Chocolate should be at least 70% cocoa solids.
Serve with orange ice cream.
