Buck rarebit

Serves: 2 (scaled from 2)


2 slices bread
25 g butter
2 egg
1 tsp mustard
1 tbsp flour
1 splash worcester sauce
150 g cheese
1 to taste cayenne pepper
100 ml stout


Met butter, add flour, cook 30s. Add stout gradually, cook 2 mins. Add worcs sauce. Mix in mustard and grated cheese, melt on low heat. Season with black or cayenne pepper.

Fry eggs

Lightly toast the bread, pour on sauce and grill to browned and bubbling. Top with eggs.


Can add a slice of ham if desired.
