Irish Soda Bread

Serves: 4 (scaled from 4)


1 tsp salt
55 g butter
1 tbsp sugar
2 tsp baking powder
225 g wholemeal flour
225 g strong white flour
425 ml buttermilk


Heat oven to 190C and oil a baking sheet.
Sift dry ingredients together three times to ensure good mixing. Keep any bran in the sieve.
Rub in the butter. Add 290 ml of the buttermilk and mix to a soft dough. Add more if it seems dry.
Place dough on baking sheet, sprinkle with bran, use a wooden spoon to put a deep cross into the loaf.
Bake 35 to 40 mins until the cross is dry. Cool on a wire rack.


Can substitute milk with a tablespoon of lemon juice for the buttermilk.
